Chocolate-Dipped Orange Logs
1 c. butter, softened
½ cup powdered sugar, sifted
1 tsp grated orange rind
1 tsp orange extract
2 c. flour
6 oz sim-sweet chocolate chips
½ c. chopped toasted almonds (optional)
Cream butter; gradually add sugar, beating until light and fluffy. Stir in orange rind and extract. Gradually add flour to butter mixture; mix well.
Shape dough into 2 ½ x ½ inch logs. Place on ungreased cookie sheet. Using fork, flatten three-fourths of each cookie lengthwise to ¼ inch thickness. Bake at 350 degrees for 11 minutes. Transfer to rack. Cool.
Melt chocolate chips. Dip unflattened tips of cookies in melted chocolate to coat both sides; roll coated portion in almonds (optional). Place cookies on wax paper until coating is firm.
