Kale Salad Food Prep
Thinking about the week ahead and what you can do to free up time between work and chores? This salad is easy to make and will keep in your refrigerator for use all week long. It pairs with so many different dishes and is packed with nutrients.
While you may opt for bagged kale that is already chopped, there is nothing like cutting, washing and chopping the fresh bunch. You'll find this recipe goes a long way and is relatively inexpensive in the game of eating lean.
Here is the kale salad recipe and feel free to opt for whatever fruits, like mango, peach, apple that are in season.
Kale Salad
Kale - chop enough to fill a large bowl
2 cups chopped strawberries
3/4 cup walnuts, pecans, or almonds
Combine all ingredients and top with Kale Salad dressing before serving.
Kale Salad Dressing
1/4 c. Olive Oil
1/8 c. Apple Cider Vinegar
2 T. Spicy Mustard
2 T. lemon or lime
Combine all ingredients and shake. Store at room temp for up to a week.
