Christmas Teacakes
1 c. butter, room temp.
2 tsp vanilla extract
½ c sifted confectioners’ sugar, plus more for rolling cookies
2 c. flour
¼ tsp salt
1 c. finely chopped pecans
Preheat oven to 325 degrees.
Cream butter in large bowl. Add vanilla and then gradually add ½ c confectioners’ sugar, beating until light and fluffy. Sift the flour, measure, then sift again with salt. Add slowly into the butter mixture. Add pecans & mix well.
Shape dough into 1in. balls. Place 2 inches apart on parchment. Bake 20 min or until edges are very lightly browned. Roll in confectioners’ sugar while hot. Cool on wire rack and roll cookies in confectioners’ sugar again.
Store in airtight container.
